Elderflower Power

I was looking round for a gardening blog to read, and happened across Two Thirsty Gardeners, which sounded right up my street.

I meandered round their site for a bit, before coming across an old post on Elderflower Sparkle. This reminded me that I had missed elderflower season the last few years, and I resolved to head out into the field behind my house the next morning to check on progress.

As you can see, there were flowers! Clearly the first few to open, but I had enough to take a stab at their recipe and so I did!

I had to make a few tweaks – I used limes instead of lemons, and only had enough sugar of the icing type, which has made the whole thing a little murky. I also don’t have any champagne yeast, but when I’ve made it in the past I’ve just relied on natural yeasts on the flowers, so am keeping my fingers crossed.
